Civerinos brings a new chapter with Browns of Leith and a menu dedicated to New Haven–style pizza. Expect long-fermented dough, a thin, blistered crust, and that signature smoky char, simple, confident, quality-led cooking rooted in craft and care. Set within one of Leith’s most historic social spaces, this new opening blends Civerinos’ relaxed, come-as-you-are approach with Browns’ sense of neighbourhood heritage, a place made for gatherings, good times, and pizza done properly.
New haven or “Apizza,” traditionally baked in coal ovens, is famed for its thin, charred crust and simple, yet flavorful toppings. Our take on apizza is a love letter to those New Haven heroes who started paving the way over 90 years ago.
Straight from the streets of Gragnano. We take our 72-hour signature dough, stretch it out, and blast it in the oven until it puffs into the perfect filling holder. It’s basically the ultimate Italian sandwich, crispy on the outside, light as air inside, and overflowing with the good stuff.
